Highfield Level 2 Award in Food Allergen Awareness and Control in CateringAllergen Awareness Training

This allergen awareness training course will ensure that your employees are fully aware of the foods that may trigger an allergic reaction.  They will learn exactly what precautions need to be taken to ensure that your customers do not eat a food that they are trying to avoid.  A food allergy occurs when the body’s immune system sees a certain food as harmful and reacts by causing allergic symptoms. Foods that cause allergic reactions are allergens.

This half-day course is suitable for food handlers in all business sectors; for example, Hospitality Leisure and Tourism, Schools, Colleges and Nurseries, Health and Social Care, and Food and Drink Manufacturers.

Highfield Level 3 Award in Allergen ManagementAllergen Awareness Training

This allergen management training course will ensure that your employees are fully aware of common allergens and intolerance.  They will learn the different roles in ensuring that food ingredients and allergens are effectively managed.  In addition, they will understand the importance of accurate communication of ingredient information, from supplier to consumer.  A food allergy occurs when the body’s immune system sees a certain food as harmful and reacts by causing allergic symptoms. Foods that cause allergic reactions are allergens.

This one-day course is aimed at all those responsible for the purchase, delivery, production and serving of food in all business sectors.  For example, Hospitality Leisure and Tourism, Schools, Colleges and Nurseries, Health and Social Care, and Food and Drink Manufacturers.  The qualification is also suitable for those owning or managing a smaller catering business.
