Highfield Level 3 Food Safety for Retail
What’s It About?
This Level 3 Food Safety for Retail course gives you a deeper understanding of how to manage and maintain good food safety standards in a retail environment.
You’ll look at food safety legislation, food safety management procedures, hygiene, contamination, temperature control and staff responsibilities, as well as how to monitor standards and make sure good practice is followed day to day.
The course will help you feel more confident identifying food safety hazards, monitoring the controls in place, supporting your team and taking action when standards are not being met.
What Will You Gain?
By the end of the Level 3 Food Safety for Retail course, you’ll have a stronger understanding of how to manage food safety, monitor standards and support your team in a retail environment.
You’ll learn how to apply food safety procedures, identify and control hazards, monitor hygiene and temperature controls, and make sure staff understand the standards expected of them. The course also looks at induction, ongoing training, record keeping, verification and the corrective action to take when controls or standards are not being met.
Most importantly, you’ll return to work with greater confidence to manage food safety, support your team and take action when something isn’t working as it should.
Who Should Attend?
The Level 3 Food Safety for Retail course is ideal for supervisors, team leaders, managers and small retail business owners who have responsibility for food safety standards and the people working with food. It is particularly suitable if you are involved in monitoring food safety procedures, supervising staff or supporting your HACCP-based food safety system.
The course will help you understand how to manage food safety procedures, monitor controls, maintain good hygiene standards and make sure staff receive the instruction and training they need to work safely.
If you own or manage a smaller retail food business and use the Safer Food Better Business system, the knowledge covered on this course can also help you understand the principles behind managing and monitoring your food safety controls.
If you are responsible for training or developing members of your team, the course gives you the food safety knowledge needed to support that role. If you want to develop your training skills further, our Level 3 Award in Delivering Training is a useful option.
If your role is mainly about handling, preparing or selling food rather than supervising others, our Level 2 Food Safety for Retail course may be more appropriate.
And if you work in a different food sector, choose the syllabus that reflects your workplace: Level 3 Food Safety for Catering or Level 3 Food Safety for Manufacturing.
Why’s It Important?
Supervisors and managers in food retail have an important role in making sure food safety procedures are understood, followed and monitored properly. That means knowing what good practice looks like, checking that controls are working and taking action when something isn’t right.
The Level 3 Food Safety for Retail course gives you a deeper understanding of food safety legislation, HACCP-based procedures, monitoring, corrective action, verification and record keeping, helping you make sure your food safety system works in practice rather than simply existing on paper.
It also helps you understand how to supervise good hygiene practices, support staff training, monitor food safety controls and respond when standards are not being met.
In a retail environment, there are also some very practical challenges to manage every day. Food needs to be stored and displayed safely, labels and date codes need to be correct, allergen controls need to be followed and customer complaints need to be dealt with properly. Supervisors need to understand what good practice looks like and be confident stepping in when something isn’t right.
Good food safety management is not just about meeting a requirement. It gives you greater confidence that your team knows what is expected, your controls are working and the food you sell is being managed safely.

How Long Is The Qualification Valid?
The Highfield Level 3 Award in Food Safety for Retail does not have a set expiry date. There is no requirement to renew the qualification after a set period.
However, food safety legislation, workplace procedures and good practice can change over time, so it’s important to keep your knowledge up to date.
At Envesca, we recommend refresher training every three years. It’s a good opportunity to revisit the key points, pick up any changes and make sure you still feel confident managing food safety and supporting your team.
If your role, workplace or procedures change significantly before then, it may be worth refreshing your training sooner.
How You'll Be Assessed And Certified
At the end of the Level 3 Food Safety for Retail course, you’ll complete a 45-question multiple-choice examination. You’ll have up to 90 minutes to complete it and will need to answer at least 30 out of 45 questions correctly to pass. If you achieve 36 out of 45 or more, you’ll receive a distinction.
Your completed examination will be sent to Highfield for marking. Once we receive your result and certificate from Highfield, we’ll send them to the person who originally booked the training.
When you successfully complete the assessment, you’ll receive the Highfield Level 3 Award in Food Safety for Retail (RQF), giving you recognised evidence of your knowledge and understanding of supervising and managing food safety in a retail environment.
