30 Years of Envesca: How a Food Safety Crisis Built a Legacy

In November 1996, the Wishaw E. coli outbreak shocked the UK. 21 people died after falling ill, and hundreds more were infected, shattering the public’s trust in UK food safety. 

That same year, the Food Labelling Regulations 1996 were introduced. Off the back of the outbreak and now faced with a load of new regulations, the food, hospitality and catering industries were drowning. There was no one around to make the new rules clear or help them navigate compliance.

In the chaos, Sue and Simon Ellis saw a need. And Envesca was born.

Envesca’s Early Years: 1996-2005

New food hygiene regulations created an urgent need for proper training. Envesca stepped in to fill that enormous gap and provide guidance. 

They had the knowledge, and without question, demand was there. What Envesca had to offer was invaluable. But cash flow provided a challenge for this small business.

During this time, Envesca added health and safety training to its food safety offering to significantly increase its capacity to meet demand and improve stability. This practical solution ensured there was enough money coming in, at the right time, to keep building what they’d started – what UK businesses needed.

This early growth was supported by access to European Social Funding. But when that funding ended, Envesca had to change its pricing structure and delivery model to survive. It had to adapt.

The Key Lessons from this Era

Looking back to the start of Envesca highlights some important learning points:

  • Regulation changes can create opportunity (if you act quickly)
  • Cash flow matters as much as capability
  • Diversification protects your future
  • When things get tough, persistence matters more than brilliance.

Envesca’s Evolution: 2006-2020

Envesca was growing. And as it did, so did the way it delivered its training.

What had begun as classroom training courses facilitated in Gloucester expanded to include virtual courses (thank you, technology!), reaching as far as Saudi Arabia and the Falklands.
Remote learning technology enabled the company to evolve, supporting businesses globally as they navigated laws and learning blocks. 

When COVID hit the world in March 2020, everything changed. Suddenly, face-to-face training was out of the question. Envesca moved quickly to adapt to these changes, becoming one of the first Highfield centres to offer virtual courses and online invigilated exams, allowing learners to continue to gain full qualifications during lockdown. 

This era didn’t come without its challenges, however. Trainers had to get used to new ways of teaching, including technological know-how. And some customers were sceptical… Could online learning really replace high-quality in-person delivery?

Envesca managed these problems by investing in trainer development, rather than focusing solely on the technological aspects of virtual learning. This gave trainers the confidence and competence to deliver engaging sessions in this relatively new virtual landscape. 

The quality of Envesca’s training courses never dipped. And with geography no longer limiting growth, they flourished. Virtual delivery is now one of the most important methods of learning, attracting people from all over the world – something that was unimaginable back when the company started in 1996.

Awards and reviews matter, but it’s the people who built Envesca that created its success. The people behind the name are the ones who shape it to this day.

Don’t believe it? The first team member stayed for 20 years. And today, there are colleagues with over 15 years’ service, with two who have just  celebrated 10 years with the company. One started as a part-time office administrator and, over 15 years, progressed to Safeguard Manager running our support and consultancy services department. 

These staff stories show that Envesca consistently invests in its people. Its comprehensive staff development programs create loyalty. Engaged, happy employees give back to the company that invested in them. 

And it’s not just our people – it’s our customers, too. Some customer relationships have lasted more than 20 years. One has even followed Envesca through three different job moves, reconnecting to reach that unique offering each time they started a new role. 

And lastly, not forgetting the exceptional professional partners, who have also played a huge part in Envesca’s growth, filling knowledge gaps behind the scenes. Many of our Associate Trainers and Consultants have worked with us for over 15 years. First-class mentors like Nigel Botterill, founder of Entrepreneur Circle, have challenged assumptions and shaped how Envesca thinks about progress. 

Becoming the Envesca of Today: 2015-2026

As Envesca matured, so did the need for structure. 

At the beginning, before its systems were formalised and processes were more relaxed, leads and enquiries weren’t always handled consistently. This caused opportunities to be missed. The service was high-quality, but the systems needed work. 

Introducing documented processes, clear responsibilities, and individual scorecards brought a renewed focus, accountability, and continuous improvement.

Speed also became a priority, with customer care at the forefront. Envesca is committed to getting in touch with online enquiries within a maximum of 10 minutes. They also introduced a 27-second automated callback from their website and began issuing proposals to both new and existing customers within 24 hours.

The results were immense. Envesca now has over 330 five-star reviews, which demonstrate that what customers say matters more than what they claim. Industry recognition hasn’t let up either, with the company winning 14 business awards over the years, building credibility faster than any marketing strategy could. 

A turning point came with the first CIEH award win in 2010, collected at the Houses of Parliament, which boosted Envesca’s confidence and visibility tenfold. Since then, Envesca has raised the bar even further to achieve Highfield’s Top Student Award in 2021, 2023 and 2025!

Looking Forward in 2026 and Beyond

Thirty years on from the start of Envesca, the challenges keep coming – but the company’s agility wins every time. 

New regulations, such as BRCGS Issue 10, are demanding tighter food safety controls. Or Martyn’s Law, which is set to transform event risk and security. Or modern-day challenges, like lithium-ion batteries in EV charging stations, which create new fire hazards and require meticulous assessment. And let’s not forget how hybrid working has changed fire safety planning immeasurably.

But just as Envesca helped businesses wade through 1996’s Food Labelling Regulations and 2020’s COVID pivot, they’re already ahead of the challenges in 2026.
