What’s It About?
This half-day Highfield Level 1 Food Safety in Catering course will introduce you to good food hygiene practices. It will give you a basic understanding of food safety so that you can work safely.
The course covers the importance of good personal hygiene and the essential elements of cleaning. It also gives you an awareness of cross-contamination and how to prevent it.

By attending this Highfield Level 1 Food Safety in Catering course, you will understand the basic requirements of food safety and hygiene.
You will know how to keep yourself and your work areas clean and hygienic. You will also understand the role they play in reducing cross-contamination within your working environment.

Who Should Attend?
This Highfield Level 2 Food Safety course is ideal for employees who work in a food environment but who don’t handle or cook food. These would include but is not limited to, waiting or bar staff, kitchen porters or employees handling low-risk, wrapped or pre-packaged foods.
This course is not suitable for anyone who prepares or cooks food. The Highfield Level 2 Award in Food Safety qualification would be more appropriate. Environmental Health Officers generally require food handlers to hold a level 2 food safety certificate in order to comply with the training requirements of the food hygiene regulations.
Why’s It Important?
Employers have a legal obligation to comply with the stringent rules of the Food Safety Act 1990 and the associated Food Hygiene Regulations; it is these systems that are fundamental to a “due diligence” defence.
If your employees work within a food handling environment, you have to ensure they receive food safety training appropriate to their job role.
